This cheese is something between a
Brie and a
Camembert. The cheese has a white, bloomy, often uneven rind with a little brown mottling as it ages. It has a faint aroma of mushrooms, and the flavour is quite mild and subtle in the young cheese, becoming more pronounced as it matures. Redish streaks may appear on the rind during the ageing process and this is a reliable indication of a more pronounced flavour and a very creamy texture. Lovely with some fresh fruit, such as apples and grapes.
