Sainte-Maure
Attractive log-shaped goat’s cheese, characterized by the presence of a straw running through the length of the cheese for ease of handling. The cheese has a white downy rind which hardens and starts to blue as it matures. The paste is firm but spreadable with a full, slightly “goaty” flavour which strengthens with age. Fine close textured rich flavour which should be quite mild and not too salty.
Serve as part of a cheese board or on its own with crusty bread and tomatoes. Also good for sauces and soups as the “goatiness” of the flavour tends to fade when the cheese is heated.
