Valencay
Valencay, also know as Pyramide, it is made in a truncated ash coated pyramid with a startling white paste. A light moussey texture and saltier taste than other goat’s cheeses. It is fairly moist when it is young, hardening to a grating consistency when aged. The aroma is not too goat-like, but with a citrus tang. The older the cheese the stronger the flavour becomes. It is delicious served on toast, or makes a fine accompaniment to any cheese board.
