Picos de Europa (Valdeon)
The Picos de Europa, the peaks of Europe, are aptly named, towering over the wooded foothills and tiny villages, providing a safe-haven for the millions of tiny blue spores that lurk in the limestone caves. A rich, creamy and moist cheese with blue-green veins similar to those found in
Stilton, but with a more pungent aroma, a salty bite and a piquant finish. Wrapped in vine leaves it gives a cheeseboard a rustic yet elegant look. The cheese is eaten locally with wild honey and fruity wines.
